brussel sprouts – yuck or yum?!?

this recipe will make you say “yum” for sure.  and as we count down to the biggest food day of the year, i’m sharing tips and recipes to make your day deliciously memorable.  tip #2:  cook one healthy item.  blasphemy right??  well even though it is THE DAY to go all out, there are always a couple of people who are fairly health conscientious and at least want the option of something without cream, butter or gravy!
besides, these brussel sprouts are so killer you’ll be making them year round to balance out any rich meal.
jk’s seriously tasty brussel sprouts:
1 bunch brussel sprouts (sliced into ¼ wedges)
2 tbsp. olive oil
1 lemon
1 tsp. crushed red pepper
kosher salt & fresh cracked black pepper

heat 1 tbspn. of olive oil in a skillet over medium high heat.  add the quartered brussel sprouts to the pan and sprinkle liberally with the crushed red pepper, kosher salt & pepper.  you want the sprouts to get a little bit of a crispy char so don’t turn them immediately.  let them rest there and sizzle for about 2-3 minutes.  drizzle the rest of the olive oil over the tops of the brussel sprouts and turn them over in the pan.  let this side cook for another 2-3 minutes and add the juice of one lemon. sauté until the sides are cooked through and there is a little blackening all over.  add more salt and pepper to taste & serve!
